NOTES Compared to Acquerello aged 1 year it has got darker grain and few minutes more during the cooking process which allows greater absorption
of the cooking liquid and swells of the grain. During the cooking process the starch is more stable and less dispersed. The grain is firmer and has more bite, maintaining these characteristics after cooking.
For this reason Acquerello aged 7 years is even more versatile and suitable for a variety of dishes.
