Produced with the best Lombard milk in respect of ancient traditions, it is undoubtedly a first-class product specially addressed to the most demanding consumers: for us it represents the standard-bearer of a selection of highly cured taleggio. It is a soft, washed rind PDO cheese produced from whole cow´s milk cheese making. The cheese has a parallelepiped shape, side of about 23 cm, flat sides, straight side of 4-5 cm. The average weight of each wheel is approx. 2.2 Kg. And is consumed after aging for over 35 days in wooden crates.
