Ricciolo with Truffle is Goat´s Milk semi soft cheese which comes from an ancient and precious mountain tradition that combines the soft and melting creamy paste under crust with a crumbly heart, becoming more aromatic with the ripening of the seasoning. Truffle and Goat´s milk are in a harmonious and balanced taste, fresher in the centre of the cheese where is crumbly and smoother and rounder close to the rind. The cheeses are seasoned onto wooden planks up to 8 months to favour the correct centripetal maturation, in order to give the soft melting creamy paste under the crust that is combined with the crumbly heart; the cheese has a cylindrical shape
