Soft D.O.P. cheese, produced exclusively from whole cow´s milk cheese. Dough is pierced several times to encourage the development of mould and determining the characteristics of the Gorgonzola green colour (marbling). Pasta is united, straw-coloured, mottled for the development of mould. Slightly spicy flavor characteristic.
