NOTES
With this product we combine the best drying process with the best raw material. Pigs used are from Hungary, where there is this breed of shaggy pigs, genetically pure since 1700 with a wild productive cycle (10 pigs pro hectar). The percentage of oleic acid is incredibly similar to the Spanish bellota. The meat has a unique complexity, it melts as the fat. It could be compared to the Spanish bellota but maintaining the elegance in flavours typical of this breed.
