Definitely Tuscany is famous for Pecorino (ewe´s milk cheeses) and the wide range of Salumi made both with pork and wild boar. The origins of Tuscan food are rather rustic, as we can see from its basic ingredients: bread, spelt, legumes and vegetables.
MEET THE PRODUCER
An artisan producer of cured meats, Silvano Mori is based in Torniella, an ancient mediaeval village in the hills of the High Maremma, Tuscany. Founded in 1880, the company takes enormous pride in the authentic traditions of its craft, passed down from generation to generation. Salumificio Mori specialises in the production of salami, ham and sausages from pork and wild boar, prepared according to traditional Tuscan techniques, in the belief that the finest products can only come from the very finest meat. The fresh, dry air of the Marrema hills, their craftsmanship and attention to detail in all phases of production mean that in the best Italian and European shops, the Silvano Mori brand is a guarantee of excellence and quality. Their products are imbued with the genuine flavours, knowledge and tradition of times gone by.
Chianti comes into being inside the medieval walls of Radda in Chianti, a
little village on the hills surrounding Siena, in the hearth of Tuscany and a
famous area for the production of the wine Chianti Classico. After refurbishing
an old workshop sited at no. 15 of Via XX Settembre and transforming it into a
Butchery, the sale of typical Tuscan salted meats started.
