It is famous in the world for the genuineness of its ingredients. Extra-virgin olive oil, juicy red oranges, Pachino tomatoes and Pantelleria capers, prickly pears and the olives of Nocellara del Belice are some of the excellent products that distinguish Sicilian food. Yet, we cannot forget the most famous cheeses, like Ragusano, Piacentino Ennese (Saffron Pecorino), anchovies and the semidried tomatoes.
MEET THE PRODUCER
For four generations Recca family´s name has been related to the craftmade production of fish in Sicily. Recca pays a lot of attention to the quality of the source of the fish, carefully selected, controlled and exclusively of Mediterranean origin, but also to the type of fish processing itself, which still takes place according to the old traditional method that ensure a very high level of quality and the unchanged freshness of the final product.
Pom Up, founded in 1997 by Italian-Australian businessmen, was born from a brilliant entrepreneurial idea to bring to Europe a very popular and wide spread product in Australia: "Semi-dried tomatoes". That intuition proved to be an immediate success confìrmed by the positive response from the ltalian and European gourmet markets who appreciated the high quality and goodness of this delicious product. From then to now, Pom Up, located in ltaly, has strategically set up its manufacturing plant in the South Eastem part of the Island of Sicily, an area highly suitable for the production of fresh tomatoes. For more than 10 years, the processing and marketing of this typically Mediterranean style product has been the core business of the company. The sun, the earth, the artisan method used to cultivate the tomatoes, together with modern and sophisticated drying facilities are the key components used to create this remarkably unique product.
Along the hills that gently slope down towards a crystal clear sea and the ancient Greek colony of Selinunte, where for centuries olive groves have been cultivated, the organic farm “Case di Latomie" lies. The certified quality of “Centonze” extra-virgin organic olive oil has a great value, but also a daily task that leads to painstaking and constant vigilance over the entire production cycle, from collection and selection of olives to the processes of transformation and storage of the finished product.
