The most important typical product of the region is Prosciutto of San Daniele, well-known and exported worldwide, followed by Montasio cheese and Sauris smoked ham. Among the salame and pork meats produced in Friuli, we can find varying salames, soppressa, sausages. Also famous are Trout from San Daniele and Gubana cake.
MEET THE PRODUCER
Carlo Dall’Ava, owner of the Prosciuttificio Dok Dall’Ava, belongs to a family of cured ham producers since 1955. In 2009 they finished to build the new ham factory and now they make 30.000 hams a year. The geographical setting of San Daniele, bordered by the Alps that restrict the inflow of cold air from the north and the sea with its warm Mediterranean current, has a unique microclimate that facilitates and naturally enriches the maturing of the famous Prosciutto di San Daniele.
This company was
found in 1976 by Alana Jolanda De Colo’ with the vision of perpetuating an old
local and family tradition: breading of goose.
Unique in its sector, the company has now a wide range of cured products with a
special focus in goose, duck and game meat transformation, creating fancy
delicacies that balance traditions and innovation.
