Home-made raw ham: from the legs of Italian pigs following a workmanlike processing. After a rest phase in a refrigerated cell it is washed and then hung to natural air. Seasoning starts now: up to nine months in well ventilated rooms with natural air ventilation, then legs are stored in the cellar for up to 16 months.
Finocchiona: lean and fat meat of Italian pigs ground to medium grain and seasoned with salt, pepper, garlic, and wild fennel.
Capocollo: treated with salt, pepper, fine herbs and a long massage, strictly sticking to the Senese tradition. Wrapped in straw paper, it is matured for at least three months.
