NOTES
typical soppressata of Calabria, pure cooked meat pork, cured and matured in natural intestine
casing. Prepared with the mixture of meat, medium-size minced, obtained from the shoulder of pigs, with well-chosen
fat obtained from the lard in front of the lobe, near the capocollo, and salt and sweet pepper. The ground is stuffed into
pork intestine casing, drilled and then hand-tied with natural twine. The shape can be comparable to a slightly crushed
cylindrical figure, with average length of about 15 cm and diameter of approximately 6 cm.
