NOTES It is produced with the same raw material and drying process as for the San Daniele, but instead of being branded it is smoked. This ham is smoked only after the seasoning changing colour on the skin and takinga sweet flavor of smoke inside,not sticky. The typical dairy perfumes of traditional San Daniele are made rounder by this delicate smoke taste.
