Spalla stagionata (cured pork shoulder): typical Tuscan sausage featuring an intense flavour, really appreciated by gourmets.
Filetto di lombo (pork loin): it is obtained from the best part of the pig, seasoned with salt, pepper and fines herbs.
Pancetta: lean pork belly seasoned with salt, pepper and wild fennel.
Finocchiona: lean and fat meat of Italian pigs ground to medium grain and seasoned with salt, pepper, garlic, and wild fennel.
Capocollo: treated with salt, pepper, fine herbs and a long massage, strictly sticking to the Senese tradition. Wrapped in straw paper, it is matured for at least three months.
