NOTES Obtained from the lean part of the belly of Italian pigs. Trimmed to obtain the typical rectangular shape, then treated with salt, pepper and herbs. Finally, it is hung for smoking using olive tree wood. Cut into stripes fit for browning in a pan for a few minutes, it is the traditional dressing for pasta carbonara.
