NOTES Filonzo is one of the latest creation of the SAP product line and is the result of a careful selection aimed at creating an exclusive salami. It is presented in a delicate elongated conical shape and is distinguished by its gentle and refined flavor as well as the vivid color that highlights its particularly lean body.
The piece of meat used in the processing is certainly one of the most tender of the pig and is found under the loin, so you have the
ability to make two “Filonzo” for each boss.
The brine treatment lasting a couple of days along with the modest amount of salt that envelops it for a short period of time, gives the
product a unique and compact body. After the slow and natural maturing in suitable premises, it get an exceptional salame, slightly salted and delicious taste that melts literally in your mouth.
