NOTES It is made only with fresh thighs of heavy Italian pigs, over 15 kg in weight, salted and flavoured with a mixture of aromatic herbs. Boned with care so as not to tear the muscle fibres, the ham is cooked slowly in a steam oven at a temperature of around 68°. This is our simple recipe: good quality meat and care in processing. Only in this way will the cooked ham be soft and smooth, sweet and never acid.
