NOTES Specific mix for patisserie work and making pastry. The finely milled flour makes a fairly crumbly pastry, with a very ‘short´ texture – great for sablé-style biscuits and sweet tarts.

The flour is carefully processed to maintain a good structure to the grains, this means the final pastry won´t become too hard once baked.
