Small-sized capers, selected from the first pickings, are cured in wine vinegar then dried and preserved in extra virgin olive oil. Some of their fragrance seeps into the oil, which in turn acquires a green hue, an aromatic bouquet and a strong caper flavor. This exchange of properties makes it a perfect product that is highly appreciated worldwide for its practical uses.
