This cheese saw the light for the precise intention of Paolo, patron of Romagna Terre, who wanted to sublimate the aroma of sheep´s milk with the intense taste of truffle. He patiently researched the balance between the two main ingredients of this recipe, allowing the two tastes to play together without one standing above the other.
This elegant cheese has a whitish and compact paste, with small shaves of truffle. The aroma is persistent, the taste is sharp but not vulgarly piquant.
