It has cylindrical shape, dark gray color, tender crust, weighing about 180 grams.
From the ancient tradition of preserving cheese in the ash, this cheese is made with soft and oily pasta and its thin crust from the characteristic dark color due to washing with vegetable charcoal during the maturing process.
