NOTES Canestrato is a Pecorino made with milk from small stock farms with pastures in the surrounding hills and matured in Casa Madaio´s natural stone caves. It has a strong aroma that varies from milk and grass for the medium maturity to dry hay and roasted hazelnuts for the more mature cheeses. It has a brown, scored rind, inside the cheese is pale yellow.
