It is a blue cheese D.O.P. produced exclusively from the making of whole cow´s milk. It has cylindrical shape with flat faces, straight barefoot, and average weight of approx. 12 kg.
with variations according to production techniques. After
dry salting for a few days, the forms are placed in suitable
seasoning rooms; during this period, the cheese is pierced
several times to encourage the development of molds characteristic of the gorgonzola and determining the green color (marbling). The paste is soft, spreadable straw-colored, mottled for the mold development. The crust is rough, gray / pink and NOT
EDIBLE. Decent, spicy, characteristic flavor.
