INGREDIENTS Extra virgin olive oil, Leccino olives, aubergines, radicchio, blue sh in varying proportions (tuna, mackerel, anchovies), capers, red turnips, parsley, sweet dry pepper, garlic, salt.
SHELF LIFE 1 year
The Frantoiana (or Trappetara) was a first course meal eaten by the workers at the mill during the olive harvest. The main ingredients are local pitted olives and extra virgin olive oil, then poached red garlic, purple aubergines and red radicchio are added. Ursini enhanced the original taste with dry sweet pepper, small capers and blue fish.
Try it with short pasta like penne and paccheri!
