NOTES It is made only with weighty pigs, born and bred for the trasformation in the Mantova land, the same area used for the production of “Grana” cheese. Its colour is pale pink with very white fat shades and about one centimetre or more of fat on fesa and less under the noix. It has a delicate, inebriating, perfume round with dried or in syrup fruit bouquet.The taste is sweet, satisfying and refreshing. Available on the bone or boneless in vacuum pack.
