NOTES
Mullet Roe is an Italian delicacy of salted, cured fish roe, typically of the grey mullet. It is made from the roe pouch of grey mullet, massaged by hand to eliminate air pocket, then dried and cured in sea salt for few weeks. The result is a hard, dry slab preserved inside its natural casing of the roe, which contains the eggs securely once dried and salted.
