NOTES Great as a table or grating cheese, tasty flavour, pleasantly spicy as a result of the use of lamb rennet, a property that becomes more pronounced with aging. The interior has a dense texture with white paste. The rind features the distinctive marks left by its traditional wicker basket mould.
