INGREDIENTS Cow´s milk, salt, rennet
SEASONING 24 months
WEIGHT 40 kg
Semi-fat hard cheese obtained from cooked and slowly matured paste. It is made with cow´s milk from
animals whose feeding mainly consists of forage from the area of origin. In the feeding of dairy cows, is
forbidden use of any type of silage The milk used is raw.
Milk from the evening milking is poured into the holding basins, where separation of the cream takes
place naturally overnight. This partly skimmed milk is then poured into the copper cauldrons where it is
mixed with the whole milk from the morning milking.
The use of additives is strictly forbidden
The mature cheese has a typical shape of a wheel and granular structure with a very hard rind
