NOTES It is made with 70% of finely minced lean meat and 30% of cubed fat, with flavourings, salt and pepper. For a better result it is encased in large sizes from 25 kg upwards, bound by hand and cooked for long times (at least 20 hours) in dry-air ovens. On cutting, the mortadella is fragrant, smooth and with a clean taste.
