NOTES Maccagno is the king of Toma family cheeses. It takes its name from the Maccagno pastures, which are located below Monte Cossarello, north of Biella. The Maccagno production began in the east valleys of Biella area and, then, spread throughout the whole its territory. Maccagno was the favourite cheese of Queen Margherita di Savoia and of Quintino Sella, minister of the Kingdom of Italy, founder of the Italian Alpine Club. It is used in the preparation of typical dishes from Piedmont region and as a cheese for the table.
