NOTES The leavened dough is rolled out by hand, by stretching the sheet of dough for the entire width of the bakerīs arms: this gives the bread-sticks a fragrance that would not be possible in an industrial process, and makes them extraordinarily light and crumbly. They are produced only with the best ingredients, with a particular attention to the flour blend, carefully selected in collaboration with approved millers, to obtain a crispness, a flavour and an aroma that is always unique.
