It is a soft cheese D.O.P. produced exclusively by the cheese making of whole cow´s milk. It has a cylindrical shape with faces flat, straight barefoot, and average weight of approx. 12 kg.

seasoning; during this period, which can continue for two or three months, the pasta is pierced several times to encourage the development of mold characteristics of the gorgonzola and determining the green coloring (marbling).
