INGREDIENTS Thermised cow´s milk, salt, rennet. Ripened in walnut leaves.

NOTES The refinement process, which lasts approximately six months, occurs in barrels, where the already matured forms are layered with walnut leaves. The method has ancient origins: the rich tannin content of the walnut leaves contributes to conserving the cheese, while at the same time conferring its unmistakable aroma.
