SEASONING minimum 40 days

The rind is pink/brownish, the texture is soft and crumblier in the middle and firmer towards the outer part. The flavour becomes more and more aromatic with the seasoning.
It usually ripens for about 6 months to help the centripetal seasoning that characterizes the internal melting creaminess typical of this cheese.
